Homemade Low-Sugar Strawberry Jam 🍓
Sweet, spreadable, and made with real fruit flavor—perfect for toast, yogurt, or baking.
Ingredients (simple & clean):
• 8 cups crushed strawberries
• ¼ cup water
• 1 Tbsp fresh lemon juice
• 6 Tbsp low/no-sugar pectin
• 1 cup granulated sugar
• 8 half-pint mason jars (if canning)
Directions:

Prep your jars if canning: boil jars for 10 minutes to sanitize and keep warm.

Wash, hull, and crush strawberries (mash for jam, blend & strain for jelly).

In a large pot, combine strawberries, water, lemon juice, and pectin.

Bring to a hard rolling boil over high heat, stirring constantly.

Add sugar, return to a rolling boil, and boil 1 minute while stirring.

Remove from heat.

Not canning? Let cool slightly, pour into containers, cool fully, then refrigerate (keeps ~5–6 days).

Canning? Ladle hot jam into warm jars, leaving ÂĽ" headspace. Wipe rims, add lids, and process in a boiling water bath for 10 minutes.

Cool jars undisturbed—jam thickens fully within 24 hours.
Helpful Tip:
Jam looks runny at first—don’t panic! Low-sugar pectin sets as it cools, not immediately.
