Keto Crème Brûlée

Ingredients

  • Egg yolks (from 6 eggs)

  • 1½ cups heavy cream

  • 1 tsp vanilla extract

Directions

  1. Preheat oven to 300°F and prepare six small ramekins.

  2. Whisk egg yolks and sweetener until pale and creamy. Gradually stir in cream and vanilla.

  3. Divide custard evenly into ramekins.

  4. Place ramekins in a large, rimmed baking pan. Pour hot water halfway up the sides to create a water bath.

  5. Bake 45 minutes until custards jiggle slightly. Let cool to room temp, then chill 3–4 hours or overnight.

  6. Just before serving, sprinkle 1 tsp allulose on top of each custard and caramelize with a kitchen torch until golden and crisp.
