Directions

Preheat oven to 350°F (180°C) and line a cookie sheet with parchment paper.

In a bowl, mix cashew butter, allulose, egg, vanilla, and baking soda until smooth.

Gently fold in the chocolate chips.

Roll dough into 12 balls, place on the tray, and lightly press into thick cookie shapes.

Bake 10–12 minutes, just until the edges turn lightly golden.

Let cookies cool completely on the tray to set.
