Mini Vegan Cashew Cheese Wheels

INGREDIENTS
Cheese Base

156g (5 ½ oz) raw cashews

740ml (25 oz) water, divided

56g (2 oz) tahini

3 tbsp (1 ½ oz) lemon juice

1 oz coconut oil (plus extra for greasing)

3 tbsp nutritional yeast

1 tbsp Dijon mustard (optional)

2 tsp salt
-
1 tsp garlic powder
-
¼ tsp smoked paprika
-
⅛ tsp turmeric powder

1 tbsp Fit Lane Agar Agar Powder
Topping

3 tsp dried mixed herbs
INSTRUCTIONS
1. Soften the Cashews
Cover cashews with 415ml (14 oz) boiling water. Let them soak for 30 minutes, then drain.
2. Blend the Cheese Mixture
In a food processor, combine the soaked cashews with 90ml (3 oz) fresh water, tahini, lemon juice, coconut oil, nutritional yeast, Dijon (optional), salt, garlic powder, paprika, and turmeric. Blend until silky smooth.
3. Activate the Agar
Bring 235ml (8 oz) boiling water and agar agar powder to a simmer in a saucepan. Let it boil for 1 full minute. Grease your muffin tin or molds while it cooks.
4. Combine & Blend
Pour the hot agar mixture into the food processor. Blend for 10–15 seconds until fully incorporated.
5. Mold & Chill
Pour into the greased molds and refrigerate for about 1 hour, or until firm. Loosen the edges with a silicone spatula to unmold. Roll the rims of each cheese wheel in mixed herbs for a gourmet finish.
Serve with crackers, jam, sliced apples, grapes, or on a charcuterie-style board!
