Sliceable Vegan Cheese (Melt + Stretch!) Recipe 🧀🌱

Creamy, dairy-free cheese that firms up beautifully and melts like the real thing—perfect for sandwiches, pizzas, and snacking.

Ingredients (same recipe, simplified):
Base
• ½ cup raw cashews (soaked) or silken tofu

Thickeners
• 4 Tbsp tapioca starch
• 1½ Tbsp kappa carrageenan

Flavor
• 2 Tbsp nutritional yeast
• 1 Tbsp lemon juice or vinegar
• 1½ tsp salt
• ½ tsp onion or garlic powder

Fat (optional)
• 4 Tbsp refined coconut oil

Liquid
• 1½ cups boiling water (add last)

Directions:

  1. If using cashews, soak in boiling water for 5 minutes, then drain.

  2. Add cashews (or tofu), tapioca starch, nutritional yeast, salt, seasonings, lemon juice, and coconut oil to a blender.

  3. Blend until mostly smooth.

  4. With the blender running, slowly pour in boiling water, then add kappa carrageenan. Blend until silky.

  5. Quickly pour into a container or mold and smooth the top.

  6. Chill at least 2 hours, until firm and sliceable.

Helpful Tip:
Kappa carrageenan activates with heat—always use fully boiling water and blend immediately for the best melt and texture.
